Sweet Potato Recipes #1 – Sweet Potato Casserole With Brown Sugar and Pecans



Sweet Potato Recipes #1 - Sweet Potato Casserole
NOTE: You may want to double the recipe for Thanksgiving dinner.
INGREDIENTS:
2 medium to large sweat potatoes or yams
1/2 a stick butter (1/4 cup), cut into slices
1/2 cup brown sugar
1-2 oz. bag of chopped pecans
COOKING TOOLS:
Medium sized pot
4″  x 4″ casserole dish (if doubling recipe use
BAKING TEMPRATURE AND TIME:
400 degrees for 20-30 minutes.
Start with two medium to large sweet potatoes or yams.
Cut them into chunks and boil until soft enough to pierce with a fork.
Strain.
Place sweet potatoes in bottom of casserole dish. Top with 1/2 stick of butter cut into thin slices.
Top with 1/2 cup brown sugar.
Top with 2 oz. bag of chopped pecans. Bake at 400 degrees for 20-30 minutes.
Don't forget to remove all the wrappings of the tabs of butter, like I did.
