INGREDIENTS:
2 eggs, beaten
1 teaspoon salt
1 slice of bread, crust removed
1/2 teaspoon paprika
1 teaspoon parsley
1/2 teaspoon chives
1/2 teaspoon salt (in addition to the salt above)
1/2 teaspoon Bay Seasoning
1 head of cauliflower, florets removed and chopped
Beat two eggs in a bowl and set aside.
In a food processor, process 1 slice of bread, crust removed, 1/2 teaspoon paprika, 1 teaspoon parsley, 1/2 teaspoon chives, 1/2 teaspoon salt and 1/2 teaspoon Bay Seasoning then set aside.
If you're not familiar with Old Bay Seasoning, it looks like this and you can get it at any grocery store in the spice section.
First, pull the cauliflower florets off the stem and cut into small chunks.
Boil with 1 teaspoon of salt, until soft.
Strain.
Mash.
Add bread crumb/spice mixture, eggs, and 1/2 cup of cheddar cheese, 1/2 cup of Parmesan cheese, 1/4 cup of cream cheese.
Mix together.
With a 1/4 cup measuring cup, form a mold with the mixture.
Place mixture on a griddle.
Flatten with a spatula.
Cook on both sides are golden brown.
Now eat and enjoy. I like to eat it with fried eggs.
