Did you ever read the book, "Old Black Witch" when you were a kid? I didn't. But I've read it many times to my kids.
In the book, the Old Black Witch serves blueberry pancakes.
They have her recipe on the back of the book. I revised it a little and made Old Black Witch Blueberry Pancakes for dinner tonight.
In a large bowl, mix together 1 1/4 cups flour, 2 1/2 teaspoons baking powder, 1 tablespoon sugar, 3/4 teaspoon salt.
In a seperate bowl, mix togther 2 beaten eggs, 2 1/2 cups buttermilk, and 3 tablespoons cooking oil.
Pour the wet mixture into the bowl with the dry mixture and mix. BUT, don't over mix. Just enough to barley combine it. It should still be a little lumpy. Let sit for 5-10 minutes, so the moisture can permeate through all of the dry stuff.
Add 1 cup of blue berries.
Now mix them in, but don't mix too much.
Use a 1/2 cup measuring cup to pour batter onto a griddle (or a greased pan). The blueberries really stick to the griddle - even if you have a non-stick type. Be sure to use non-stick spray.
When the first side is golden brown, flip them over. Cook until the second side is golden brown.
Now, eat and enjoy!
