My Wife Raves About These Enchilada Tacos (Found on Pinterest, Modified By Me)


INGREDIENTS:
2 tablespoons butter
1 medium onion, chopped up fine
1 tablespoon minced garlic
1 bunch of green onion, chopped
1 pound ground beef
2 tablespoons taco seasoning
1/2 teaspoon ground cumin
1 cup sour cream 0r 1/2 block of cream cheese
1/4 cup Italian dressing
2 cups picante sauce (I actually recommend the store bought stuff. Shocker, I know.)
1-15 oz can of black beans
2 cups frozen corn
6 flour tortillas
5-6 cups grated cheddar cheese
1-2 cups shredded ice burg lettuce
1-2 cups shredded cabbage
2-3 tomatoes, diced
Sour cream for topping
In a medium sized pot, sauté 1 large onion, chopped, 1 tablespoon minced garlic, and 1 bunch green onion chopped in 2 tablespoons butter.
Add 1 pound of ground beef and cook until ground beef is no longer red.
Stir in 2 tablespoons taco seasoning, 1/2 teaspoon ground cumin, 1 cup sour cream, 1/4 cup Italian dressing, 2 cups salsa (homemade or store bought will do), 1-15 oz can of black beans, and 2 cups frozen corn.
In a 9 by 12 casserole dish, layer half of the beef mixture on the bottom.
Break your tortillas in half, and place them on top like...
This.
For the next layer, spread half the grated cheese on top of the tortillas, then make one more layer of each with the half of the meat, tortillas, and cheese that is left over.
Bake in the oven for 25 minutes at 400 degrees.
When you pull it out, let it sit for 15 - 25 minutes, then cut into squares and enjoy.
You'll LOVE it. If you want, you can top it with any combination of shredded ice burg lettuce, shredded cabbage, chopped tomatoes, or sour cream. I use them all.
